The SMG topic has been beat to death a gagillian times on all the forums. Quick answers to your questions...
"does SMG have an external clutch?" It has an "internal" clutch, but no clutch peddle. The clutch is operated by a computer and hydraulics.
"When you upshit or downshift using the paddles on the steering wheel, do you have to let go of gas? just like in a real manual?" Not as a rule. In some cases you'll get smoother shifts lifting off the gas and others you get better shifts with the gas. As a general rule, you don't have to lift off the gas, the computer will do it for you.
"does the same go for the stick too? must you let go of the gas to upshift?" Yes. However, there is a thing call "speed shifting," but let's not get into that.
