Manual Transmission Death?

The shifter in my car has a lot of ply to it and because of this every once in a while I will half-engage a gear and get this awful grinding sound.

How long do you think until a tooth chips off and ruins the tranny?

Also, I've taken my car up mountain roads at very high RPMs a lot. The whole area above the tranny gets really hot, and sometimes you can even (I think) smell the tranny fluid. How often should I get it replaced (and should I get it flushed)?

Well imo I would. Especially driving at sustained high RPM's. Since this is the case it seems you may be "slamming" into gears with the shifter which increases wear. I would service right away and replace shift linkage to tighten everything up.
